Ingredients
- 1/2 tea cup of cooking oil
- 1 cup of sugar
- 2 large eggs
- 3 very ripe bananas
- 2 cups self raising flour
- 1/2 teas baking powder
- Pinch of salt
- Optional: chopped nuts and/or raisins
Method
- Mix the oil and sugar,
- Add the eggs and bananas and mix,
- Add the flour, baking powder and salt and mix well,
- Continue to mix and add a little milk if necessary (the mixture should have a “dropping consistency” which means if you pick up a dollop of mixture with a spoon it should drop back slowly into the bowl and, if not, it’s too solid so add some milk).
- Stir in nuts and/or raisins if you want,
- Put in 2 greased pans (or what I do is line the pans with grease proof paper) and bake in oven for 35 to 40 minutes at 170 degrees.
