Banoffee Cheesecake

Base

  • 1 packet (400 gr) crumbled digestive biscuits
  • 1 big dollop margarine or butter (to bind biscuits)

Pie

  • 450 gr cream cheese (1 1/2 pkts Mercadona cream cheese)
  • 1/2 cup sugar
  • 2 or 4 mushy bananas
  • 3 large eggs

Method

  1. Prepare the base by heating the margarine/butter and then add to the biscuit crumbs, mix.
  2. Place in baking dish to make the base of pie.
  3. Mix all the pie ingredients with a whisk. Mix well.
  4. Pour onto the biscuit base.
  5. Put in oven at 170 degrees for 45/50 minutes.
  6. When cold serve with sliced bananas, caramel sauce and cream.
